The Arroz Caldo is a dish made of rice and chicken gruel heavily infused with ginger and toasted garlic. Many people also love having it with hard-boiled egg.

The first part of the Arroz Caldo recipe is the list of ingredients. Here are the ingredients that can cook the delicious dish for up to six (6) people:

  • 1 ½ lbs chicken cut into serving pieces
  • 34 ounces water about 1 liter
  • 1 ½ cups uncooked rice
  • 1 teaspoon garlic
  • 2 tablespoons fish sauce / soy sauce
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon garlic
  • 4 eggs hard boiled
  • 1 cup onion minced
  • 1 cup scallions green onions, minced
  • 2 knobs ginger
  • 2 tablespoon cooking oil
  • 1 chicken cube bouillon
  • 1 lemon or 4 pieces calamansi

In a pot, heat the cooking oil and saute the onion, garlic, and ginger. Add some ground black pepper, too.

Add the chicken cube and allow it to melt from the heat. Add the chicken cut in serving pieces and wait until it is cooked or when the outer layer turns golden brown in color.

Add the fish sauce and the uncooked rice. Mix them well and cook them for a few minutes. Add the water and bring it to boil.
