  • 4 lbs leftover lechon or lechon kawali
  • 2 cups beef stock
  • 3 cups lechon sauce
  • 6 cloves garlic, crushed
  • 1 teaspoon whole peppercorn
  • 2 large onions, chopped
  • 8 pieces dried bay leaves
  • 3/4 cups vinegar
  • 1/2 cup soy sauce
  • 3/4 cups sugar
  • salt to taste

The other part of the lechon paksiw recipe is the procedure in cooking this delicious dish. It may take around 45 minutes to cook aside from the 10-minute preparation process. Here are the steps in cooking this special dish:

Place a pot over heat and pour-in the beef stock. Bring to boil.

Add the crushed garlic and chopped onions then continue cooking until their texture becomes soft.

Add the whole peppercorns, soy sauce, and dried bay leaves.

Add the leftover lechon to the pot and allow it to simmer for 30 to 35 minutes.

Pour-in the vinegar and bring it to boil. Afterwards, allow it to simmer for 10 minutes.

Add the sugar and the lechon sauce. Allow it to simmer again for another five (5) minutes. Dash in some salt to taste.
