A lot of restaurants serve buttered chicken. However, it will surely be much more special if it is homecooked and specially made with love for your family and friends. There are only a few and easy steps involved in preparing this kind of sumptuous viand.

Let us go through a buttered chicken recipe. Its first main part is the list of ingredients. Here are the ingredients needed to cook buttered chicken for six (6) people:

  • 1 kg Chicken nibbles, Legs or Thighs
  • 150 g good quality butter, cut into small cubes
  • 1 tbsp garlic powder
  • 3 cloves garlic, minced
  • 1/3 cup fish sauce
  • 3 eggs
  • 1 tbsp onion powder
  • 1 1/2 cups flour
  • 2 tsp black pepper
  • 3/4 cup cornstarch
  • tsp sugar
  • 1 tbsp salt
  • oil

The cooking time can take as fast as 30 minutes. However, it is important to prepare the chicken hours ahead as you need to marinate your chicken pieces for a savory dish.

The second part of the buttered chicken recipe is the cooking process. Here is a guide on how to cook this delicious favorite of many people:

Step 1 — In a bowl, mix the eggs and the fish sauce thoroughly to form a paste.

Step 2 — Add the chicken in the mixture of egg and fish sauce. Cover the bowl and marinate the chicken for at least two (2) hours but not more than three (3) hours.

Step 3 — In another bowl, mix the flour, cornstarch, garlic powder, pepper, onion powder, and salt. Prepare the cover of the bowl.

Step 4 — Take each of the chicken from the egg mixture and add them to the flour mixture one-by-one. Cover the bowl and shake it for each chicken piece. Make sure that the flour mixture covers each of the chicken piece. Set them aside.

Step 5 — In a deep fryer or large wok, add the cooking oil and heat it up until it reaches the boiling point at 180 degree Celsius. Add the chicken pieces one at a time and then deep fry the chicken for 15 minutes or until it is cooked and golden brown and crispy.

Step 6 — While you are deep-frying the chicken, melt the butter in a large saucepan in low heat. Add garlic and cook it until it is golden brown. Add sugar, mix it well until it dissolves but not caramelised. Switch the heat off.

Step 7 — Take the cooked chicken from the deep fryer, drain the excess oil and then toss it in the butter mixture. Make sure to coat each chicken piece with the butter mixture evenly before putting it in a platter for serving.
