Nowadays, more and more people make sure that they eat healthy dishes at least once a day or make sure that they have some vegetables per meal. Among the veggies dishes, one of the most popular among the Filipinos is the Laswa.

Aside from the Pinakbet recipe which is also loaded with vegetables, another recipe that many people turn to in the pursuit of cooking something healthy is the Laswa recipe. This veggie dish is a favorite of many Filipinos most especially the elder ones while most parents make sure that their eat is into eating this kind of healthy dish.

The first thing that you need to check in the Laswa recipe is the list of ingredients that you need to prepare. Here are the ingredients in cooking a healthy veggie dish that can be shared by up to eight (8) people:

  • 2 pieces Chinese eggplant, sliced
  • 10 pieces shrimp, cleaned
  • 2 cups pumpkin / squash, diced
  • 1 1/3 cup saluyot leaves
  • 1 1/3 cup Amaranth leaves or kulitis
  • 20 pieces string beans cut into 2 inch pieces
  • 2 1/2 cups spinach leaves or alugbati
  • 10 pieces okra, sliced
  • 1 1/2 piece onion, wedged
  • 2 1/2 pieces tomato, wedged
  • 2 1/2 teaspoons bagoong alamang or guinamos
  • 6 3/4 cups water
  • salt and ground black pepper to taste

The next part of the Laswa recipe is the cooking process which may take as fast as 30 minutes to come up with a sumptuous healthy dish. Here are the steps on how to cook a delicious Laswa that you and your loved ones can share:

Heat water in a cooking pot to boil. Add onion and tomato and cover the pot for 15 minutes. Continue cooking it under medium heat.

Add the diced squash and the bagoong alamang. Continue boiling your Laswa for five (5) minutes.

Add string beans, eggplant, and okra into the pot. Continue cooking the vegetable dish for four (4) to five (5) minutes.

Add shrimp into the cooking pot. Cover the pot and continue cooking for one (1) minute before proceeding to the next step or adding more ingredients into the pot.

Add the amaranth leaves or kulitis, the saluyot, and the spinach leaves or alugbati. Stir and continue cooking for one (1) minute more. Season your delicious Laswa with ground black pepper and salt. It is best served with steamed white rice and fried fish. Enjoy your meal!
