  • 2 tablespoon oil
  • 4 cloves garlic, minced
  • 2 small onion, chopped
  • 6-8 tablespoons shrimp paste
  • 2 bitter gourd, seeded then halved and cut into slices
  • 1 small squash, peeled and cut into cubes
  • 4-6 medium tomatoes, chopped
  • 10-14 young okras, ends trimmed, cut into halves diagonally
  • 1 bunch yard-long beans (sitaw), ends trimmed and cut into 3-inch lengths
  • 2 large eggplant, ends trimmed and cut into cubes
  • 1000 ml water
  • salt

The next part of the Pinakbet recipe is the cooking process. It may take as fast as 45 minutes to cook this sumptuous vegtable dish. Here are the steps on how to cooka delicious Pinakbet:

Heat oil in a pan over medium-high heat. Add pork and cook it until its color turns brownish and the fat is rendered.

Reduce the heat to medium and add the garlic and onion. Cook the herbs until they are soft and the aroma can be sensed. Add tomatoes and cook it for around three (3) to five (5) minutes or until it is tender and the skin peels off.

Add the shrimp paste and continue cooking for one (1) minute. Add the squash and water and cover the pan. Allow it to simmer for around two (2) minutes.
