The first part of the Maja Blanca recipe is the preparation of the ingredients. Here are the ingredients to make up to 12 servings of the coconut pudding:
- 1 (14-ounce) can full-fat unsweetened coconut milk (5 – 20% fat)
- 2 (14-ounce cans) unsweetened coconut cream
- 3/4 cup canned cream-style corn
- 1/2 cup cornstarch
- 1/2 cup white sugar
- 1/4 cup fresh or frozen corn kernels, optional
The other part of the Maja Blanca recipe is the cooking process. It may take around 2 hours and a half to make this delicious Pinoy favorite. Here are the steps in cooking Maja Blanca:
Step 1
Begin with making the Latik, a coconut that is topped on the pudding. Add the coconut milk to a big nonstick skillet and let it boil over high heat. Make sure to stir it occassionally and continue boiling until the oil begins to separate from the milk. It may take around five (5) minutes.
Step 2
Lower the heat to medium. Using a heatproof spatula, scrape the bottom of the skillet until only the golden brown residue and the oil are left. It may take around 15 minutes before you get to the ground meat-looking Latik.
Step 3
Strain the mixture to remove the oil. Transfer the Latik or the coconut solids into a bowl and set it aside for a while. Put it inside the fridge to chill it.
Step 4
Line an 8-inch square baking pan with parchment paper. It is best to extend the paper up to two (2) sides of the pan. Set it aside for a while.
Step 5
In a medium saucepan, add sugar and cornstarch. Whisk them together until they have completely blended.
Step 6
Add the cream-style corn, coconut cream, and corn kernels. Bring it to boil over high heat. It may take around five (5) minutes. Make sure to constantly stir the mixture. After five (5) minutes, reduce the heat to medium and continue cooking for around two (2) minutes or until the mixture is thick and bubbly.
Step 8
Transfer the mixture into the prepared pan with parchment paper. Cover it and put it inside the chiller for at least two (2) hours.
Step 7
Once you are ready to serve it, transfer your sumptuous Maja Blanca in a plate by inverting the pudding and sprinkling the Latik on top of it. You may slice it before adding the coconut solids.
