The first part of the Crispy Pata recipe is the list of ingredients that you need to prepare. To yield a pork leg viand that up to four (4) people can share, here are the ingredients that you must have at the kitchen:

  • 1 piece whole pork leg, cleaned
  • 2 tablespoons whole peppercorn
  • 6 pieces dried bay leaves
  • 6 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons ground black pepper
  • 6 cups cooking oil
  • 12 cups water
  • 4 pieces star anise optional

The next part of the Crispy Pata recipe are the steps in cooking this delicious Pinoy favorite. Here are the steps on how to cook this sumptuous dish:

Pour in water to a cooking pot and let it boil. Add dried bay leaves, four (4) teaspoons of salt, whole peppercorn, and star anise.

Add the pork leg in the cooking pot. Let it simmer until the pork leg is tender. It may take up to an hour for the pork leg to tenderize.

Remove the pork leg from the cooking pot and set it aside until the temperature goes down. Once its temperature has went down, rub the leg with garlic powder, remaining salt, and ground black pepper. Let it stand for 15 minutes.

Heat a huge cooking pot that has a cover. Pour in the cooking oil and, once the oil is hot already, deep fry the pork leg. Cook the pork leg on a medium heat until both sides are crispy. Be careful when flipping the pork leg to the other side.

Once you’ve achieved the crisp that you want, turn off the heat and transfer the pork leg into a wide serving plate. The crispy pata is best served with atcharang papaya and a dipping sauce. Enjoy your meal!
