Binignit is a fruit and tubers stew that originated from the Visayan region in the Philippines. It is like the Ginataang Halo-Halo aside from the fact that the Ginataang Halo-Halo uses glutinous rice balls. The Binignit also uses Muscovado sugar.

The first part of the Bignignit recipe is the list of ingredients. To yield up to five (5) servings of this popular Pinoy favorite, here are the ingredients that you need to prepare:

  • 2 medium purple yam cubed
  • 2 medium sweet potato cubed
  • 2 pieces saba banana cubed
  • 4 cups coconut milk
  • 1 cup Muscovado sugar
  • 1 ½ cups sliced ripe jackfruit
  • 1 ¼ cup tapioca pearls
  • 2 medium gabi cubed
  • 2 tablespoons glutinous rice flour
  • 1 ½ to 2 cups water

The next step of the binignit recipe is the cooking process. Here are the steps on how to cook this delicious Pinoy favorite:

In a cooking pot, add the coconut milk and water. Stir the mixture and let it boil.

Add purple yam, sweet potato, ripe jackfruit, saba banana, and eddo or gabi into the pot of coconut milk. Cover the pot and continue cooking for eight (8) to ten (10) minutes more above medium heat.

Add the Muscovado sugar and the sago pearls. Make sure to stir to spread and melt the sugar evenly and to spread the pearls. Cover the pot and continue cooking for eight (8) more minutes.

In a bowl, mix the glutinous rice flour with 1/4 cup of water. Stir until the glutinous rice dilutes completely in water. Add the mixture into the cooking pot. Stir and continue cooking until all the yams, sweet potato, and gabi are soft.

If you want your binignit to be soupy, you can add more water and add more sugar as needed.

Once all the yams, sweet potato, and gabi have softened, you can transfer your delicious binignit into a serving plate. Serve and enjoy your sumptuous snack!
