Step 1 — In a deep bowl, add 1/3 cup of corn flour, 1/4 cup of flour, 2 eggs, 1 tsp salt, and 4 tbsp water. Make sure to mix them well until they turn into a paste free from lumps. The texture must be sticky but running.

Step 2 — Add your pork cuts to the flour mixture. Make sure to coat each pork cut evenly. Cover the bowl and put it inside the fridge for at least one (1) hour.

Step 3 — Deep fry the pork in high heat. Add the cooking oil to a wok and start deep-frying your pork after the oil reached its boiling point. Cook the pork for three (3) to five (5) minutes. After it, take the pork and drain the excess oil before setting it aside.

Step 4 — On another wok, add oil and saute the ginger and garlic. Add the carrots, capsicums, and onions and continue to stir fry them for a minute.

Step 5 — Add chicken stock, sugar, vinegar, soy sauce, pineapple juice, tomato ketchup and diluted cornstarch. Bring it to boil and allow it to simmer for two (2) minutes. Season it with ground black pepper and salt.

Step 6 — Switch the heat off and pour the sauce over the crispy-fried pork and sliced tomatoes.
