Palabok is a favorite of many people. It is a Filipino rice noodle dish with a rich pork and shrimp sauce. In most cases, it is best paired with slices of buttered toast. The first part of the Palabok recipe is the list of ingredients. Here are the ingredients that you need to prepare in cooking a pasta dish that can yield up to six (6) servings:

  • 500 grams rice noodles bihon
  • 1/2 lb ground pork
  • 2 tbsp cooking oil
  • 3 cups pork broth
  • 1 tbsp anatto powder
  • 6 tablespoons all-purpose flour
  • 1 piece shrimp bouillon
  • 2 tbsp fish sauce
  • 1/2 tsp ground black pepper
  • ½ cup tinapa flakes smoked fish
  • 1 cup pork belly boiled and sliced thinly into small pieces
  • ½ cup chicharon pounded
  • 4 ounces firm tofu fried and sliced into cubes
  • 2 hard boiled eggs sliced
  • 1/4 cup green onion or scallions finely chopped
  • ½ cup cooked shrimps boiled or steamed
  • 2 lemons sliced (or 6 pieces calamansi)
  • 3 tablespoons toasted garlic

With regards to the cooking process which is the other main part of the Palabok recipe, the process may take around 45 minutes only. Here are the easy steps in cooking this delicious pasta dish:

Soak the rice noodles in water for around 15 minutes. After it, drain the noodles and set it aside.

Heat the cooking oil in a saucepan. Add the ground pork and cook it for around five (5) to seven (7) minutes.

Dilute the annato powder in pork broth then pour the mixture in the saucepan. Bring it to boil.

Add the shrimp cubes and stir it. Allow it to simmer for three (3) minutes. Add the flour gradually while stirring the mixture.

Add the fish sauce and the ground pepper. Allow it to simmer until the sauce becomes thick. Set it aside.

Put the noodles in a strainer and submerge the strainer in a boiling water for around a minute or until it is cooked. Remove the strainer from the pot and drain the water from the noodles.

Place the noodles in a serving plate. Pour the sauce on top of the noodles and arrange the toppings. Your delicious Palabok is ready and it is best served with a slice of lemon or calamansi.
