Unlike most soup dishes, Sinigang na Baboy is a delicious sour-tasting soup that features pork ribs, vegetables, and a tamarind-flavored broth. The first part of the Sinigang na Baboy recipe is the list of ingredients. To yield a viand for up to four (4) people, here are the ingredients that you must prepare:

  • 2 pounds pork spare ribs, cut into 2-inch pieces
  • 2 large tomatoes, quartered
  • 2 tablespoons fish sauce
  • 1 medium onion, peeled and quartered
  • 6 pieces gabi, peeled and halved
  • 2 finger chilies
  • 1 6-inch radish (labanos), peeled and sliced
  • 1 bunch bok choy or pechay, ends trimmed and separated into leaves
  • ½ bunch long beans (sitaw), ends trimmed
  • 6 pieces okra, ends trimmed
  • 1 eggplant, ends trimmed
  • 1 ½ (1.41 ounces each) packaged tamarind base powder
  • 8 cups water

The next part of the Sinigang na Baboy recipe is the cooking process. It may take up to two (2) hours but you will surely yield a satisfying viand that you and your family and friends will like. Here are the steps on how to cook this dish:

Rinse the pork ribs with clean water and make sure to drain the water well. In a pot over medium heat, add the pork spare ribs and enough water to cover it. Bring it to boil.

Once the water has boiled, remove the scum and add tomatoes and onions. Pour in the fish sauce as well and lower the heat. Let it simmer for around one hour or until the meat is tender. Add more water to maintain around eight (8) cups of water in your soup.

Add gabi and continue cooking for four (4) to six (6) minutes or until the meat is tender.

Add chili peppers and radish and continue to simmer from two (2) to three (3) minutes.

Afterwards, add the long beans continue cooking for around two (2) more minutes.

Add okra and eggplant and cook for another one (1) to two (2) minutes. If you are using packaged tamarind base, add it to the pot until the tamarind base is fully dissolved on the soup.

Season your dish with salt and pepper based on your taste. Afterwards, add the bok choy and continue cooking the dish for another one (1) minute.
