The first part of the Fish Escabeche recipe is the list of ingredients. To cook a delicious dish that can be served to up to four (4) individuals, here are the ingredients that you must prepare:

  • 1.6 lbs fish (large) sliced into serving pieces
  • 1.6 tablespoons salt
  • 0.6 cup cooking oil
  • 2.4 cloves garlic chopped
  • 0.8 onion thinly sliced
  • 0.8 green bell pepper Julienne
  • 0.8 red bell pepper Julienne
  • 1.6 thumbs ginger Julienne
  • 2.4 tablespoons white vinegar
  • 0.8 carrot Julienne
  • 2.4 tablespoons white sugar
  • 3.2 tablespoons banana ketchup
  • 0.8 tablespoon cornstarch
  • 1.6 tablespoons cooking oil
  • Salt and ground black pepper to taste
  • 0.8 cup water

The next part of the Fish Escabeche recipe is the cooking process. The cooking time may take around just 30 minutes to be done cooking the delicious dish. Here are the steps on how to cook a Fish Escabeche:

Put the fish in a plate and rub it with salt. Let it stand for at least five (5) minutes.

Heat the cooking oil in a frying pan. Once the oil is heated, fry the fish in both sides until it turns golden brown in color. Transfer the fish in a plate and set it aside for a while.

In another pan, add two (2) tablespoons of cooking oil and heat it. Saute the garlic and onion until they turn soft. Add the tomato ketchup, water, sugar, and vinegar. Make sure to mix them well by stirring. Let the mixture boil.

Add the bell peppers and carrots in the frying pan and cook them for three (3) minutes. Season with salt and pepper until you achieve your desired taste.

Mix the cornstarch with two (2) tablespoons of water. Add the mixture into the pan and stir until you achieve your desired consistency. Remove the escabeche sauce and pour it over the fried fish. Serve it with steamed white rice. Enjoy your meal!
