The first step is to tap the Message icon in the top right of your Feed and tap the New Message icon in the top right.

You will then see the lock icon on chats that are end-to-end encrypted. Any other conversations you have outside of the end-to-end encrypted chat with the same people will appear as separate chats in your Chats list.
